Description

Made with sweet potatoes, whole wheat flour, and rolled oats, these soft, cake-like cookies make a yummy healthy snack for kids (and grown ups too!) They’re a great way to sneak in those veggies! I usually make them plain to please the picky eaters in the family, but they’re also great with raisins, nuts, or chocolate chips.

Ingredients

  • ¾ cups Unsalted Butter, Room Temperature
  • ½ cups Brown Sugar, Packed
  • 1 whole Egg
  • 1 cup Peeled, Cooked, And Mashed Sweet Potato, Room Temperature
  • ¾ cups All-purpose Flour
  • ¾ cups Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Salt
  • ¾ cups Rolled Oats (not Instant)
  • 1 cup Raisins, Nuts, Chocolate Chips, Or A Combination (optional)

Preparation

Preheat oven to 350 degrees.

In a large bowl, cream butter and sugar. Add egg and sweet potato and mix well.

In a separate bowl, whisk together both flours, baking powder, cinnamon, salt, and oats. Carefully add to the sweet potato mixture and mix until just combined.

If using, add raisins/nuts/chocolate chips, stirring by hand to combine.

Form heaping tablespoonfuls onto parchment-lined sheets (I use a 2-tablespoon cookie scoop.) Flatten slightly with the palm of your hand.

Bake for 8-10 minutes. Cool on wire racks.
