Classic thin sugar cookies made with sweet figs.
1. Preheat oven to 375 F.
2. Mix the flour, baking soda and baking powder in a large bowl.
3. In a mixing bowl using an electric mixer, cream the butter and sugar. Add the egg and vanilla and mix to combine.
4. Add the wet ingredients into the dry, mix until combined (will be a little stiff).
5. In a small bowl toss the chopped figs with the 1 1/2 teaspoons of sugar, then fold the figs into the dough.
6. Drop heaping tablespoons of dough onto an un-greased baking sheet spacing them about 2 inches apart.
7. Bake for 8-10 minutes or until golden. Remove pan from oven and set on a cooling rack.
8. Sprinkle cookies with sea salt while still hot, then remove them from the pan to cool on a cookie rack.
