These cheese cookies have a crunchy buttery layer of cookies with Edam cheese and are drizzled with cheddar cheese, which make them crunchy yet melt in your mouth! Definitely worth a try and to die for. Cheers!
1. Preheat the oven to 160ºC (320ºF).
2. In a small bowl, sift in flour, cornstarch, and milk powder. Set aside.
3. In the bowl of a stand mixer, beat butter until pale in color. Add 3 egg yolks, one at a time, and mix well until pale in color.
4. Using a spatula, mix flour mixture into the butter mixture, little by little, in 3 additions. Mix well until all the ingredients are incorporated.
5. Add in the grated Edam cheese, mix well.
6. Using your hands, form dough into a ball shape. Roll it in between 2 sheets of parchment paper, no thinner than 0.5 cm. Don’t roll the dough too thin because it will break easily.
7. Cut in desired shape (you can just use knife to make a rectangular shape).
8. Line a baking sheet with parchment paper and place cookies on sheet, leaving at least 0.5 cm space in between.
9. Beat remaining egg yolks and brush all the cookies with with the egg yolk wash. Top with cheddar cheese.
10. Bake at 160ºC (320ºF) for about 30 minutes until gold in color. Make sure you keep an eye on them so they don’t over-bake.

Thank you Tina for your compliment, this is actually typical chinese cheese cookies so it’s a but different from usual. Definitely will sharing again some recipe next time

Yesterday I made it and it turns so good! So easy to make but the result is awesome! Never tried such a amazing cheese cookies before! Thanks for sharing this good recipe all my family members love it. Looking forward for another recipe from you
