Description

My Mom’s version of cobbler is more to my liking. It is firm like a cake and has a wonderful topping. Great served warm or at room temp. YUMMY!

Ingredients

  • 1-¼ cup Butter, Divided
  • 1 cup Granulated Sugar, Divided
  • 1 whole Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1-½ cup Flour, Divided
  • 1-¼ teaspoon Baking Powder
  • ½ teaspoons Salt
  • ½ cups Milk
  • 3 cups Strawberries, Hulled And Halved

Preparation

Preheat oven to 350.

Soften 3/4 c of butter and and beat on medium. Add 3/4 c sugar and continue to mix well. Add egg and vanilla, mixing well.

Combine 1 1/4 c flour with the baking powder and salt . Add to butter mixture alternately with milk, beginning and ending with the flour mixture.

Pour into a greased 8 in pan. Pour in batter and top with strawberries, cut side down.

For the topping, combine 1/4 c flour, 1/4 c sugar in a small bowl. Cut in 1/4 c chilled butter . Sprinkle over the cobbler.

Bake at 350 for 45 minutes

Had hubby’s parents over for Mother’s Day today. I made this, and it was delicious. I will definitely make it again.

The top of the recipe calls for 1 1/4 cups of butter, yet the rest of the recipe adds up to cup. I used it as you wrote in the narrative, one cup plus a 1/4 and it came out great. Not sure where that other 1/4 cup would have gone.

Seriously aMazing! I doubled the recipe and baked in a 9X13X3 cake pan since I needed to feed about 12 people (and I didn’t want to share my piece). I also added blueberries & blackberries. Will make again!

This was a great simple ingredient recipe! I used mostly Whole Wheat flour with some white. Very good!

This cake is delicious. I had some fresh strawberries picked and decided to give it a try. I am so glad I did. I had to bake it a bit longer than 45 minutes, but it still came out moist and fluffy.

I added blueberries for fun and covered the berries in sugar and then just poured the batter ontop of the berries! Great Dessert!

This was a great recipe, even made gluten free. I substituted 1:1 Namaste Perfect Blend Gluten Free Flour for regular flour. It came out great. I liked it better the second day, cold from the fridge.
