Description

This is a triple-decker Strawberry Cake with Vanilla Frosting. We still have tons of ripe gorgeous strawberries and the berries coming from the local strawberry farms are so beautiful and sweet. I pureed them and baked them right into the vanilla cake batter. The cake is not too sweet, and when it is paired with sweet tartness of the strawberries and the super sweet vanilla frosting, it is wonderful!

Ingredients

  • FOR THE CAKE:
  • 2 cups Fresh Strawberries, Hulled (this Should Yield About 1 1/4 Cups Of Puree))
  • 1 cup Butter
  • 1-½ cup Sugar
  • 2 teaspoons Vanilla
  • 4  Eggs
  • 2-½ cups Flour
  • 1-½ teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • FOR THE FROSTING:
  • ½ pounds Butter
  • 3-½ cups Powdered Sugar
  • ¼ cups Milk
  • 2 cups Sliced Fresh Strawberries

Preparation

1)Preheat the oven to 350 degrees F. Prepare three 8” pans with non-stick baking spray.
2) Puree the 2 cups of strawberries in a food processor and set aside.
3) Cream the butter and sugar together until light and fluffy.
4) Add the vanilla and the eggs one at a time.
5) When the eggs are all added, beat the batter for 2 minutes.
6) Meanwhile, mix all of the dry ingredients together and add the mixture to the batter.
7) Add the pureed strawberries and mix in until combined.
8 ) Divide the batter evenly between the three pans.
9) Bake the cakes at 350 degrees F for about 25 minutes or until just baked through.
10) While the cakes are baking, make the frosting by whipping together the butter, powdered sugar and milk.
11) When they are done, remove the cakes from oven. Remove the cakes from the pans onto a rack to cool.
12) Place one of the cakes on your serving platter. Spread some frosting over the first layer.
13) Sprinkle half of the 2 cups sliced strawberries over the frosting.
14) Place the second layer of cake on top and repeat the process; then top it with the third cake.
15) Frost the whole cake with the remaining vanilla buttercream frosting.
16) Slice and enjoy!

I was excited to find a recipe that did not call for prepackaged ingredients. This turned out wonderful. I used 3 8 inch pans like recipe called for. Took a little work to get spread in pan. However I am pretty sur that is why the other reviewer had soggy cake. Mine is beautifully textured and tastes great too!

Flavor was great but super soggy cake. It only made 2 8in rounds for me. I’m sure it would be great as cupcakes.
