Description

A delicious alternative to brownies!

Ingredients

  • 2 cups Flour
  • 1-½ cup Sugar
  • ¾ cups Packed Brown Sugar
  • 1 stick Butter, Softened
  • 1 cup (2 Small) Thinly Sliced Ripe Bananas
  • ¾ cups Flaked Coconut
  • ½ cups Sour Cream
  • 1 whole Egg
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • ½ teaspoons Ground Nutmeg

Preparation

Preheat oven to 350F.

Combine the first 4 ingredients in bowl of mixer and mix on very low speed until crumbly. Press only 1 1/2 cups of the mixture into an ungreased 9 x 13″ pan.

Then reserve 1/2 cup of the remaining mixture for the topping and set aside.

To the remaining mixture in the bowl, add the remaining ingredients in the recipe.

Beat at medium speed for 1 minute or until blended.

Spread over crumb crust and sprinkle with reserved 1/2 cup of crumbs.

Bake at 350 degrees F for 30-40 minutes or until light golden brown. Cool and cut into bars.

HINT: When spreading a batter over a crumb crust try first to spoon it as evenly as you can over the crust and then even it out gently with an offset knife/spreader or a silicone spatula.
