These are the best spice cookies I’ve ever had. They are almost like a gingersnap, but a bit chewy on the inside.
Preheat the oven to 350 degrees.
Combine flour, baking soda, cinnamon, ginger, cloves, salt, and cayenne pepper.
Cream butter and sugars until light and fluffy. Add molasses and mix until combined. Add egg whites and mix until everything is incorporated.
Slowly add dry ingredients to the butter/sugar mixture until everything is combined.
Roll dough into 1-inch balls and bake for 8 minutes.
Cookies should be soft on the inside and crunchy on the outside.
