Speculaas are Dutch spice cookies. These are traditionally eaten around the Sinterklaas celebrations at the start of December.
Preheat the oven to 175 degrees Celsius (or about 350 degrees Fahrenheit).
Mix all the ingredients and knead until you have a nice supple dough.
If you want ‘pepernoten’ (traditional bite-size cookies), then roll small marbles of the dough and put them (with enough space in between) on a greased cookie sheet.
If you want to make shaped cookies, it’ll help to chill the dough thoroughly before putting it into the oven, as this will help the cookies keep shape. You could make a log out of the dough and leave it in the fridge overnight, or put it in the freezer just long enough to get thoroughly cold.
You can then just cut slices off the log, or roll the dough out and use your cookie cutters.
Put the speculaas into the oven for about 25 minutes. Hang out in the kitchen and take deep breaths while they bake.

MY daughter has a school project where she has to bring food from a country, after a quick bit of research we found these cookies. Cant wait to make them!
