Gluten-free and dairy-free soft chewy toffee.
Grease an ice cube tray and set aside.
Place brown sugar, coconut oil, honey/maple syrup and condensed coconut milk in a pan over a medium heat. Bring to the boil then reduce heat until it is simmering. Simmer for 10 minutes while stirring gently with a balloon whisk.
Remove from heat and pour into a jug. Fill the ice cube tray with the toffee.
You can leave for a few hours to set or place in the fridge and it will set within the hour. Remove the toffees from the ice cube tray and wrap in oil or wax paper.
