Description

This is one of the easiest recipes out there for fortune cookies with hassle-free ingredients!! Oh, and they are sooo delicious!!

Ingredients

  • 4 whole Egg Whites
  • 6 Tablespoons Sunflower Oil
  • 1 teaspoon Vanilla
  • 1 teaspoon Amaretto Di Saronno
  • 6-¼ ounces, weight Flour
  • 1-½ teaspoon Cornstarch
  • ½ teaspoons Salt
  • ¾ pounds, 1-¼ ounces, weight Sugar
  • 2 Tablespoons Water

Preparation

*Note: The key to making these perfectly is timing. You must have everything prepared and ready to go before the cookies are placed in the oven. Work with three cookies at a time as they harden immediately. Personalized fortunes should be written/printed on strips of paper approximately 1/2″ wide and 3 1/2″ long. Also, the more you spread the batter on the cookie sheet, the thinner the cookies will be and in consequence, the larger they will be… The shape will be a little different when you fold them.

Preheat your oven to 300F (150C).

Beat the egg whites in a bowl with the oil, vanilla and amaretto until frothy.

Sift the flour and cornstarch together into the bowl with the egg whites mixture. Add salt, sugar and water and mix til batter is smooth.

Using a tablespoon, pour onto a well greased cookie sheet and spread the batter into a disk shape using the back of a spoon (should be roughly 4″ inches diameter after spreading). Start by making three or four cookies at a time.

Bake for 15 minutes or until edges turn golden.

Remove disk immediately from the cookie sheet, place the personalized fortune in the center and fold sides of the cookie towards the center and over the fortune and press/seal edges with finger tips. Immediately and gently fold the cookies in half again (from one tip to the other- but not completely touching) over the rim of a jar.

To maintain the shape, let them cool nestled in a muffin/cupcake tin. They will harden and become crispy.

Continue with the rest of the batter.
