Description

I love this Ombre Cake! I call it Smurf Cake, because it reminds me one of my favorite fairy tales from my childhood. The cake is soft, delicious and very easy to make! Just perfect for parties!

Ingredients

  • FOR THE CAKE:
  • 4-⅞ ounces, weight Egg Whites
  • 8-½ ounces, fluid Milk
  • 1-½ Tablespoon Vanilla Extract
  • 6 ounces, weight Soft Butter
  • 10-⅝ ounces, weight Granulated Sugar
  • 10-⅝ ounces, weight Plain Flour
  • 1-½ teaspoon Baking Powder
  • 1 pinch Salt
  • 1-½ teaspoon Blue Food Coloring
  • FOR THE CREAM FROSTING:
  • ½ cups Double Cream
  • 17-⅝ ounces, weight Mascarpone
  • 4 Tablespoons Powdered Sugar
  • 8 whole Rafaello Candies

Preparation

For the cake:

1. Preheat the oven to 175°C.

2. In a medium bowl, whisk together egg whites, milk and vanilla extract. Set aside.

3. In another bowl mix butter with sugar. Combine with flour, baking powder and salt.

4. Combine the flour mixture and the egg white mixture and mix until dough comes together in a mass.

5. Divide the batter into three bowls. In the first bowl add a tiny drop of coloring. In the second bowl add more coloring and in the third, add even more. That way you have 3 different shades of blue.

6. Pour the darkest batter into a greased 8-inch cake pan. If you have three 8-inch pans put the other bowls of batter into pans as well; otherwise you can use the same pan and bake 3 different times. Bake for 20 minutes. Remove from oven.

7. Let the cake cool in the pan for about 10 minutes. Then place cake onto a wire rack to finish cooling. Repeat twice with the rest of the bowls of batter (use the same greased pan).

For the cream frosting:

1. In a medium bowl whip double cream to stiff peaks then combine it with the mascarpone and powdered sugar.

2. Add additional cream if the frosting is too thick

3. Add more sugar if you feel the need.

To assemble:

1. Divide cream into 4 parts.

2. Put your first cake layer on the cake platter and spread 1/4 of the cream evenly across the top.

3. Put the second cake layer on top and repeat with another layer of frosting.

4. Put the final cake layer on top, top-down.

5. Frost the cake with the rest of the cream.

6. Decorate with Rafaello candies
