Description

Skinny chocolate chip cookies are great—you can eat more than one and not feel guilty! Very low-sugar, low-fat and vegan-friendly to boot!

Ingredients

  • 1 cup All-purpose Or Whole Wheat Flour
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Brown Sugar, White Sugar Or Honey
  • 4 Tablespoons Creamy Peanut Butter
  • 8 ounces, fluid Unsweetened Applesauce
  • ⅓ cups Dark Chocolate Chips

Preparation

Preheat oven to 350 F. In a large bowl combine the flour, baking powder, salt, vanilla extract, and sugar and mix well. Stir in the peanut butter and applesauce until combined well then fold in chocolate chips.

If the mixture is a little sticky for handling try refrigerating it for 30 minutes to an hour to help firm it up. Drop the dough onto a greased baking sheet by the tablespoon-sized scoop, spacing each about 2 inches apart. Bake them for about 8-10 minutes or until they are golden brown.

Yes I do Jessica! I think it’s a wonderful idea too, making me want to try it on my next batch :)

Do you think I could sub Nutella for the peanut butter? My son is allergic to peanuts and eggs.
