This recipe was adapted from another recipe, requiring only basic ingredients in minimal quantity, but the result is oh so yummy. When I bake them, they usually disappear before the night is over.
1. In a bowl, combine flour, baking powder, baking soda, salt and cinnamon. Set aside.
2. In a separate bowl, cream butter and sugar until smooth and creamy.
3. Add vanilla and egg, beat until combined.
4. Add dry ingredients to the butter mixture; set your mixer to the lowest setting and beat until just combined. Do not overbeat or the cookies will become tough.
5. Stir in oats and raisins.
6. Drop spoonfuls onto a greased baking tray. Bake for 10-12 minutes at 190 degrees Celsius. The bigger your cookies, the longer the baking time needed.
The cookies are ready when the edges are just beginning to brown.
