Description

Sometimes you need a simple sweet treat!

Ingredients

  • 2 whole Eggs
  • ½ cups Sugar
  • 1 stick Unsalted Butter, At Room Temperature
  • 2 Tablespoons Milk
  • 1 Tablespoon Vanilla
  • 1 cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 1 whole Apple, Golden Delicious Or Other Soft Eating Variety
  • 1 Tablespoon Sugar, For Topping
  • 1 dash Cinnamon, For Topping
  • Powdered Sugar (optional, For Dusting)

Preparation

Preheat the oven to 350 F and butter and flour an 8″ or 9″ spring-form pan. Set aside.

Add the eggs and sugar to a large bowl and beat together using a stand or hand mixer. Beat in the butter, then mix in the milk and vanilla.

In a separate bowl, sift together the flour, baking powder and salt. Add the dry ingredients into the wet and mix just until combined. Pour the batter into the pan and smooth the top.

Peel, core and thinly slice the apple. Lay the slices in a diagonal pattern on top of the batter. Mix together the sugar and cinnamon for the topping and sprinkle it over the apples.

Bake for 35-40 minutes or until a cake tester inserted into the center of the cake comes out clean. Remove pan from oven and set it on a rack. Cool cake before removing the pan and dust with powdered sugar before serving, if desired.
