Description

Root beer taste without the brain freeze.

Ingredients

  • 1 cup Unsalted Butter, At Room Temperature
  • 1 cup Granulated Sugar
  • 1 cup Packed Light Brown Sugar
  • 1 whole Large Egg
  • ½ cups Vegetable Oil
  • 2 Tablespoons Milk
  • 1 teaspoon Vanilla Extract
  • 4 teaspoons Root Beer Extract
  • 3-½ cups Flour
  • 1 teaspoon Cream Of Tartar
  • 1 teaspoon Baking Soda
  • ⅛ teaspoons Salt
  • 1-½ cup White Chocolate Chips

Preparation

1. Preheat oven to 350F. Place butter and sugars in a large bowl. Using an electric mixer at medium speed, cream. Beat in egg. Continue to beat until mixture is fluffy. Beat in oil, milk, vanilla and root beer concentrate.

2. In a large bowl whisk together flour, cream of tartar, baking soda and salt. Add to butter mixture and mix until combined. Fold in white chocolate chips.

3. Drop about 2 tablespoonfuls of dough at a time onto ungreased cookies sheets. Bake 10 minutes. Let cool 5 minutes on the cookie sheet and them remove to a wire rack to cool completely.

Oh my goodness, oh my goodness. These are so delicious. I made a double batch for Christmas and they were a huge hit. The dough is very simple to make, much like a standard chocolate chip cookie. I agree with jecarl that refrigerating the dough between batches makes it easier to work with, but it isn’t essential. The flavor is stupendous but the true genius of this cookie is the texture. They have an almost, well, carbonated texture. Unbelievable! I recommend putting them in the fridge after they have cooled and eating them chilled. It adds to the illusion and brings out the root beer flavor.

One last piece of advice: These cookies release an overwhelming root beer perfume as they bake. In fact, as soon as you bring the tiny bottle of concentrate home your whole house will smell like an A&W bottling plant. This is not a bad thing, but you might want to pick up a bottle of root beer while shopping for the ingredients. You will definitely start craving root beer while making these cookies!

Took me 5 stores to find the root beer concentrate, but i got it! These tasted just like root beer floats! Once you get over the mental oddity of root beer flavor in cookie form, it’s great. I refrigerated the dough first and they baked nicely. Wonderful consistency and flavor. Just from scooping, some got more chips than others. But the ones with gobs of chips were the best–more of the “float” flavor. May add more chips next time. Co-workers ate them up!
