Description

Chocolate cookie with a gooey caramel center.

Ingredients

  • 1 cup Butter
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2 whole Eggs
  • 2 teaspoons Vanilla
  • 2-½ cups Flour
  • 1 teaspoon Baking Soda
  • ¾ cups Cocoa
  • _____
  • 1 bag Rolo Candies
  • 2 Tablespoons Sugar

Preparation

Cream butter and sugars together. Add eggs and vanilla, mix until smooth.

In a separate bowl, combine flour, soda and cocoa. Slowly add flour mixture to butter/sugars and mix completely.

Cover and refrigerate for 30 minutes.

Unwrap Rolo candies and shape dough over one candy. Roll that ball in the 2 T of sugar until completely coated.

Bake at 375 for about 10 minutes or until the tops begin to crack.

These are fantastic! How anyone can give them less than 5 stars is beyond me. They are soft, chewy, fudgy cookies with a wonderful crunch from the sugar. And with the caramel surprise in the middle….just awesome!

I brought 3 dozen into work today. There are only 5 of us here, and they are almost gone! Everyone says they can’t stop eating them!

Thanks for sharing. These are definitely a keeper!

I have made this for years. It is always a smash with friends and it is one of the cookies that my husband requests more than any other. Very delicious!!!

I tried a couple of variations… rolling the balls in cocoa and also in 10x sugar.. neither one worked though. But what DID work was making GIANT cookies by covering two rolos with the dough and then baking for the same time. Perfection!

These cookies are wonderful! They bake up perfect every time and taste amazing. My girls love to help me make these, they love hiding the Rolo in the middle of the dough =) Thanks for a great recipe we will use time and again!

So so so yummy! My sis-in-law and I made these for the family tonight and they were a hit, my nephew told me “Aunt Christy, you make good cookies!”

Very tasty, but the directions aren’t totally clear. Make sure you only put enough dough around the candy to cover it, not too much extra or, like me, you will end up with huge cookies with a tiny rolo hidden in it. Very easy to make otherwise!
