Description

Whoever invented Reese’s Peanut Butter Cups was a genius! There are only 5 ingredients for the cupcakes and the frosting! It can’t get easier than this.

Ingredients

  • 1 box (18-20 Oz. Size) Chocolate Cake Mix
  • Additional Ingredients Specified On The Cake Box (typically Water, Eggs And Oil)
  • 1 cup Reese's Mini Peanut Butter Cups (the Tiny Ones; Or Chop Some Miniature Cups)
  • 16 ounces, weight Cream Cheese, At Room Temperature
  • 1 cup Confectioners Sugar
  • 2 Tablespoons Creamy Peanut Butter

Preparation

1. Preheat oven to 350ºF. Prepare two 12-count cupcake pans according to the cake mix instructions.
2. Make chocolate cake mix according to the package directions (you’ll typically need water, eggs, and oil, as directed in mix package).
3. Fold in mini Reese’s peanut butter cups.
4. Pour into cupcake pans. Bake for 17 to 20 minutes or until a knife inserted in the center comes out clean. Remove pans from the oven and set them on a rack. Let cupcakes cool.
5. For the frosting, in a medium-sized bowl using a mixer, beat cream cheese until light and fluffy. Add confectioners’ sugar and beat until smooth and creamy. Then add peanut butter and mix until combined. Pipe onto cupcakes and top with chopped mini Reese’s if desired.
