Description

All my favorite flavors of fall, rolled up and dipped in chocolate.

Ingredients

  • 10 ounces, weight White Chocolate Chips
  • ¼ cups Pumpkin Puree
  • ½ teaspoons Cinnamon
  • ½ teaspoons Vanilla Extract
  • ½ teaspoons Instant Espresso
  • ⅛ teaspoons Nutmeg
  • ½ cups Dark Chocolate Chips

Preparation

1. Melt the white chocolate chips in the microwave (stirring after each 30-second increment) or in a double boiler until the chocolate is smooth.
2. Stir the pumpkin, cinnamon, vanilla, instant espresso, and nutmeg into the white chocolate.
3. Spread the mixture onto a parchment- or Silpat-lined baking sheet and place in the refrigerator to cool.
4. Once the mixture has cooled, remove from the fridge.
5. Taking 1 rounded teaspoon at a time, roll the truffle mixture into a ball and place on the baking sheet. Once all of your truffles are made, place them back in the refrigerator for 5 mintues.
6. Melt the dark chocolate chips in the microwave, cooking for 1–2 minutes, stirring after every 30 seconds until the chocolate is completely smooth.
7. Take the truffles back out of the fridge and dip the bottom of each one in the melted dark chocolate. Place them back on the parchment- or Silpat-lined baking sheet and return to the fridge until the dark chocolate has set.

5 Mitts for “WOW!These are soooo good”! But since I am not a cook, especially when it comes to making candy, my presentation really stunk. My truffles were definitely not round and were made worse when I tried to dip them in the chocolate. I used the tines of a fork to drizzle melted chocolate on top which did not help with the “professional” touch. Thank goodness our family is all about taste. I’m sure I’ll only get better because these are definitely a keeper.

These are awesome!! All my favorite flavors wrapped into one little bite-sized morsel–I love them! It’s cool to me how the spiced pumpkin & white chocolate make you think of pumpkin pie with whipped cream on top. Thanks so much for this great recipe!
