A healthy cookie that doesn’t taste like it!
Heat the oven to 375 degrees. In a mixing bowl, combine all the dry ingredients. Then add the pumpkin, eggs, milk, oil, and vanilla. Beat on medium speed until well mixed. Stir in chocolate chips or cranberries. Drop by tablespoonfuls (I use my small scoop) onto baking sheets covered in parchment paper. Bake for 11-13 minutes. Cool on wire racks.
