A delicious holiday treat.
1. Preheat oven to 350 F. Line 2 cookie sheets with parchment paper; set aside. In a medium bowl combine all-purpose flour, whole wheat flour, baking soda, pumpkin pie spice, and salt; set aside.
2. In a large mixing bowl beat butter with an electric mixer on medium high speed for 30 seconds. Add granulated sugar and brown sugar. Beat until combined, scraping sides of bowl occasionally. Add eggs, one at a time, beating well after each addition. Beat in pumpkin and vanilla. Beat in as much of the flour mixture as you can with the mixer. Then stir in any remaining flour mixture and the chocolate chips.
3. Drop dough in 2 tablespoon-sized mounds 2 inches apart onto the prepared cookie sheets. Bake for 10-12 minutes or until edges are light brown. Cool on cookie sheets for 2 minutes. Transfer to a wire rack and let cool completely.
