Description

Football is back, leaves are turning and pumpkin is everywhere. Fall is here y’all and it’s not complete without these Pumpkin Bars with Cream Cheese Frosting.

These are the perfect accompaniment to a hearty stew or slow cooker meal, a delectable dessert to take to a football party, or an addition to tailgate lunches shared at harvest time (your farm crew will thank you!).

Ingredients

  • FOR THE BARS:
  • 4  Eggs
  • 1-⅔ cup Sugar
  • 1 cup Oil
  • 15 ounces, weight Canned Pumpkin
  • 2 cups Flour
  • 2 teaspoons Cinnamon
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • FOR THE FROSTING:
  • 8 ounces, fluid Cream Cheese, Softened
  • 1 stick Butter
  • 1 teaspoon Vanilla
  • 2 cups Powdered Sugar

Preparation

In a mixer on medium speed, combine eggs, sugar, oil, and pumpkin.

In a separate bowl, mix dry ingredients: flour, cinnamon, baking powder, baking soda, and salt. Add dry ingredients to the pumpkin mixture. Mix on low speed until combined.

Pour batter into a greased 9×13 inch pan and smooth out the surface. Bake at 350°F for 30–35 minutes. Let cool completely before frosting bars.

For the frosting:
In a mixer over medium speed, combine cream cheese and butter until smooth. Mix in vanilla extract. On low speed, add powdered sugar until completely combined. Spread onto cooled bars.
