You’ve probably got all of the ingredients in your kitchen to make this one-pan bar cookie. Always a favorite with my children.
In a medium-sized saucepan, boil 1 cup raisins in 2 cup water until approximately 1 cup of liquid remains. Cool slightly and add all of the remaining ingredients. Mix until blended. Pour into a greased jelly roll pan. Bake at 350 degrees (F) for 20 – 25 minutes. Glaze with a thin powdered sugar frosting if you like. (I like the glaze made with lemon juice or with lemon zest.)
Note: If you make this with just one cup of flour, it makes a nice pudding-like dessert topped with whipping cream.
