Yummy, melt-in-your-mouth, brown sugar and pecan macaroons.
Preheat oven to 250 F.
In a medium sized bowl, beat egg white with vanilla extract until stiff peaks form. Fold in the brown sugar. Fold in pecan halves until each half is coated with brown sugar and egg mixture. Use a spoon and drop 2 coated pecan halves onto a greased cookie sheet leaving an inch or two between each scoop. More pecan halves can be used for larger portion.
Bake for 30 minutes at 250 F. At the end of the 30 minutes, turn off the heat and leave pan in the oven for another 30 minutes. Pecan kisses will be crisp when done.
