Wheat/gluten free peanut butter and chocolate chip truffle cookies.
In a medium sized bowl cream together everything except the chocolate chips. Stir in the chips. Drop dough by teaspoon onto a parchment lined baking sheet leaving at least an inch between each. Bake at 350 F for 10 minutes. Remove baking sheet from the oven and allow them to cool completely before you remove them from the sheet.
