A soft and chewy peanut butter cookie with an ooey gooey melty center.
Preheat oven to 350 degrees F. Line 2 baking sheets with silpats or parchment paper and set aside.
In a large mixing bowl, cream together sugar, peanut butter, and butter. Add eggs and vanilla and blend well. Mix in flour, baking soda and salt.
Form dough into 24 equal sized balls – about 1” size. Flatten each ball and place a Snickers bar inside each one. Fold dough up around the Snickers, making sure the entire candy bar is covered. The ball will seem really big, but it will melt and flatten as it cooks.
Bake 9-11 minutes until set. Cool on sheet for 3-4 minutes; remove to cooling rack and cool slightly before eating. That chocolate and caramel inside will be really hot, so be careful with small children!
