The best peanut butter cookies I have ever tasted.
In a mixing bowl, cream the shortening, peanut butter and sugars, add vanilla and eggs.
Combine flour soda and salt, add to creamed mixture.
Shape into 1 inch balls, place two inches apart on baking sheet. Flatten to 3/8 inch with fork or bottom of a glass.
Bake at 375 for 7-8 minutes or until golden. Cool on wire racks.
In a mixing bowl, beat filling ingredients (the last 4) until smooth. Spread on half of the cookies, and top each with another cookie. Makes about 4 dozen.

I made these with the one cup shortening and they turned out great. The husband and kids loved them and when I took them in to work to feed to my coworkers (to get the rest out of my house!) they loved them too!

Found a similar recipe online that called for 1 cup of shortening. Made these this afternoon. They are good, but I don’t usually bake with shortening, so they were a little heavy/oily for me. I think I might try them with margarine and see if it changes them much. I think they would be great with a chocolate filling as well. These are a very good, sturdy sandwich cookie.

Jana, how much shortening? These cookies look great and I’d like to bake them right away!!!
