Chopped mini peanut butter cups make these a wonderful cookie!
Heat oven to 375 degrees. Line 2 baking sheets with parchment paper. In a large bowl, whisk together the flour, baking soda, and salt. Coarsely chop peanut butter cups.
With a mixer, beat butter and sugars. Add egg and vanilla and beat to combine. Gradually add flour mixture and mix till incorporated. Fold in chopped peanut butter cups.
Drop tablespoon-sized portions, two inches apart, on cookie sheets. Bake for 10 to 12 minutes till just lightly brown around the edges. Cool on wire racks.
Makes 48 cookies.
