Quick, delicious peanut butter cookies. Great for little helpers!
Cream shortening and peanut butter. Add sugars and egg. Mix well until creamy. Stir in flour until well blended. Drop by rounded teaspoonfuls 3 inches apart on an ungreased cookie sheet. Flatten with a fork, making crosshatch markings. (Wet the fork if it sticks.) Bake at 350ºF for 8–10 minutes until edges are slightly golden. Top will still be soft. Carefully remove with wide spatula from cookie sheet onto cooling racks or wax paper immediately.
Kids love to help with the flattening. Just watch for over-squishing!
