These cookies are easy! Just a few ingredients and you have delicious and crisp peanut butter cookies that are soft on the inside and crispy on the outside. They’re not overly powerful with the peanut butter taste while still tasting just like you’d expect them to.
Mix butter, brown sugar, and peanut butter together. Add eggs, flour, baking soda and vanilla extract. Roll rounded teaspoonfuls of batter into balls and roll in white sugar. With a fork, make a criss-cross pattern in the ball, flattening it slightly.
Bake at 350°F for about 12 minutes or until golden brown.
Makes 48 to 60 cookies.
