Soft peanut butter cookies with dark chocolate chunk pieces.
Preheat oven to 350ºF.
In a medium size bowl, whisk flour, baking soda, and baking powder. Set aside.
In the bowl of a stand mixer using the paddle attachment, beat butter and peanut butter until smooth and creamy. Add both sugars, and beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla.
Slowly add flour mixture until just combined. Fold in chocolate chunks. Cover the bowl and let cool in the refrigerator for 30 minutes.
Scoop onto parchment-lined cookie sheet and bake for 12–14 minutes or until edges are golden brown. Allow cookies to cool for 5 minutes before removing from baking sheet.
