Description

Fluffy cookies made with maple syrup for maple syrup day. They taste just like pancakes!

Ingredients

  • 1 cup Butter, Softened
  • 1 cup Brown Sugar, Packed
  • 1  Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup Maple Syrup
  • 4 cups Flour
  • 2 teaspoons Baking Soda
  • ½ teaspoons Salt
  • ⅓ cups Sugar, For Rolling Cookies

Preparation

Preheat oven to 350ºF. Lightly grease a cookie sheet and set aside.

In a large bowl, cream together the butter and brown sugar until fluffy. Add the egg, vanilla, and syrup. Scrape the bowl down when done to ensure everything is well incorporated.

Sift together the flour, baking soda, and salt. Add in 1/2-cup increments until fully incorporated.

Roll the dough into 1-inch balls. Roll in the sugar then place on the baking sheet. Slightly flatten with the back of a spoon.

Bake for 8–10 minutes at 350ºF. Allow to cool on the tray for 2 minutes then remove to finish on a wire rack.
