Description

Made with fresh orange juice and rind. So yummy. A seasonal favorite at our house!

Ingredients

  • FOR THE COOKIES:
  • 1 cup Shortening
  • ½ cups Sugar
  • 2 whole Eggs
  • 4 cups All-purpose Flour
  • 1 whole Orange, Zest And Juice
  • 3 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 1 cup Skim Milk
  • _____
  • FOR THE FROSTING:
  • 3-½ cups Powdered Sugar
  • ⅓ cups Shortening
  • 2 Tablespoons Golden Syrup
  • 1 Tablespoon Grated Orange Peel
  • ¼ teaspoons Salt
  • ¼ cups Fresh Orange Juice
  • Food Coloring And Orange Extract (optional)

Preparation

Preheat oven to 350 degrees F.
Mix together all ingredients for cookies with an electric mixer on medium speed for approximately 1 minute. Dough will be slightly sticky. (Be sure to FINELY grate orange peel and rind in recipe.)
Drop by tablespoonfuls onto a slightly greased cookie sheet. Bake about 10 minutes or until cookies are firm and bottoms are just starting to brown.
Remove from cookie sheet to wire rack to cool completely before frosting.

For the frosting, mix all frosting ingredients together with an electric mixer for approximately 2-3 minutes. Food coloring and/or orange extract can be added if desired. Frost cookies and enjoy!
