Description

Light and airy, easy microwave peanut brittle.

Ingredients

  • ½ cups Light Corn Syrup
  • 1 cup Sugar
  • 1 cup Dry Roasted, Lightly Salted Peanuts
  • 1 teaspoon Butter
  • 1 teaspoon Pure Vanilla Extract
  • 1 teaspoon Baking Soda

Preparation

Butter cookie sheet and set aside.

Combine corn syrup and sugar in 2 qt microwave safe (glass) bowl. Microwave at high for 4 minutes.

Stir in peanuts. Microwave at high for 4 minutes.

Add butter and vanilla extract. Stir until well mixed (about 5 seconds). Microwave at high for 1 1/2 minutes.

Gently stir in baking soda, just until light and frothy. Immediately pour onto cookie sheet. Don’t spread or smooth it out as this will change the texture of the top.

Let it set 30-45 minutes or until cool enough to touch. Break into pieces.

Enjoy!

Makes about 1 pound.

Note: Due to variations in microwaves, you may have to adjust the cooking times just a bit.

I adjusted the times to 4:15 for first two rounds and 75 sec for the last. I added almost 1 Tbsp butter too. I love the airy texture and just almost over cooked for the deep browned sugar taste. Love it!! I’ll never go back to stovetop peanut brittle.

Pretty good! Really need to watch it while cooking, though. I was helping my daughter with homework while cooking this, so for the first batch I followed the directions to the letter, putting it in the microwave each time for the exact time stated in the directions. It was BURNED!!! I made it again, this time knocking off a little time (I can’t remember now how much). It turned out pretty good, though I still thought the peanuts tasted a tad burned. I waited 30 min. and then tried to break it apart, it was pretty hard. It actually tasted better the next morning.

*Update*
I made this a third time. I put the sugar/syrup in the microwave for 4 min. Took it out, stirred it, and put it back in for 1 min. I took it out, added the peanuts, stirred it all up, and put it back in for 2 min. I took it out, added the butter and vanilla, stirred it all together, and put it back in for 1 min. This worked marvelously. The only reason I didn’t give it 5 mitts is b/c it itsn’t quite as good as Bev’s Best Brittle which I had the privelege of tasting at the Incredible Food Show in Oct.

Very good!! I’m wondering if I need to cook it a tad longer because it is kind of chewy…good thing I have good teeth! ;-)
