Oatmeal Rhubarb Yogurt Snack Cake

Description
This is a combination of oatmeal, fruit and yogurt made into whatever you choose. You could make bars, muffins, bread or cake.
Ingredients
- 2 cups Flour
- 2 cups Oatmeal
- 1 cup Brown Sugar
- 3 teaspoons Double-acting Baking Powder
- 1 teaspoon Salt
- ½ teaspoons Cinnamon
- 2 cups Vanilla Yogurt
- 2 whole Eggs
- 4 Tablespoons Olive Oil
- 2 cups Rhubarb
Preparation
Preheat oven to 375ºF.
Lightly grease pans. This makes about 24 muffins, a large cake or 2 loaves of bread.
Combine dry ingredients and mix well. Mix yogurt, egg and oil and add to the dry ingredients. Fold in the rhubarb (or fruit of your choice; I used Rhubarb but any fruit would work , maybe even apples or bananas). You can also add raisins or nuts.
Bake for 25–35 minutes on the middle rack.
