Description

Oatmeal raisin cookies from a classic recipe, made fun and easy with three of my favorite baking tools.

Ingredients

  • 14 Tablespoons Unsalted Butter, Softened
  • ¾ cups Brown Sugar, Packed
  • ½ cups Sugar, Granulated
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 1-½ cup Flour, All Purpose
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • ½ teaspoons Salt
  • 3 cups Oats, Quick Cooking
  • 1 cup Raisins

Preparation

Preheat your oven to 350 degrees F.

In a stand mixer, cream the butter and sugars until they are light and fluffy. Add the eggs in, one at a time, until well combined. Add in the vanilla.

In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. With your mixer on “stir”, pour the flour mixture into your creamed mixture a bit at a time. Once well combined, remove bowl from the mixer and use a wooden spoon to stir in the oats and finally the raisins.

Scoop rounded tablespoon fulls of batter onto your baking sheet. This job is of course made much more enjoyable with the assistance of a scoop, silicone mat, and a rockin’ cookie sheet. Bake for 12 minutes, or until golden brown. Remove from the oven. Allow to cool on the pan for a few minutes. Remove to a cookie rack to cool completely. Enjoy!

Delicious! I didn’t know I was low on oatmeal so I added a little extra flour, also I “plumped” the raisins in hot water then drained. Very good.
