Description

A cookie that has it all. Great flavor and texture…betcha can’t eat just 5!

Ingredients

  • 1 cup Softened Buter
  • ½ cups Granulated Sugar
  • 1 cup Brown Sugar
  • 1 cup Peanut Butter
  • 2 whole Eggs
  • 2 Tablespoons Vanilla Extract
  • 2 cups Oats
  • 2-½ cups Flour
  • 1 teaspoon Baking Soda
  • 1 bag Chocolate Chips, 12 Ounce Bag (or Any Flavor You Like!)

Preparation

Preheat oven to 350F.

Use a mixer to cream butter and sugars until smooth. Mix in peanut butter till combined; then add eggs and vanilla.

In a separate bowl, whisk together oats, flour, and baking soda. Combine with your butter mixture until well mixed. Stir in your chips of choice. I only used about 3/4 of the bag of chips and I thought it was plenty, but feel free to throw in the whole bag!

Transfer dough to an ungreased cookie sheet. I like to make these cookies pretty small, just about a rounded tablespoon. Since they are small, I easily eat 17 and feel no guilt!

Of course, all oven times are different. I bake these for exactly 9 minutes and they turn out perfect. You may think they look underdone, trust me, they are perfect. You don’t want to overbake these.

Delicious! I halved the recipe, added a pinch of salt and only about a teaspoon of vanilla. Great texture, fluffy, light and moist all at the same time! Still made plenty of cookies only making half.

I’ll definitely be making these cookies again, I absolutely loved their texture. With the flour to oatmeal ratio so high, they ended up much softer than your average oatmeal cookie, but with more substance than most chocolate chip cookies. My one small qualm is how sweet they were. I only added two teaspoons of vanilla instead of the recommended two tablespoons, plus a generous pinch of salt, and I still thought they could use a little more balance to the sugar. Also, I agree with making sure not to over-bake. Mine were perfect in 8 minutes.
