Description

Cookies loaded with oatmeal, peanut butter and banana.

Ingredients

  • 1 whole Large Banana, Peeled
  • 1 stick Butter
  • ¾ cups White Sugar
  • 1 cup Packed Brown Sugar
  • 1 cup Creamy Peanut Butter
  • 2 whole Eggs
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 2 cups Quick Oats
  • 1 cup Flour
  • 1 cup Chocolate Chips Or Peanut Butter Chips (optional)

Preparation

In a large microwave safe mixing bowl, add banana and butter. Microwave them for about a minute until the butter is soft and you can mash it and the banana together.

Preheat the oven to 350 F.

Add the white and brown sugar to the bowl with the banana mixture. Mix the sugar, butter and bananas well. Add the peanut butter, eggs, salt and baking soda. Stir until everything is completely mixed. Add the oats and then stir in the flour. Finally add in chips if you are using them and mix well.

Use a nonstick cookie sheet and spoon drops of the cookie mixture onto the sheet, spacing them about 2 inches apart. Bake for 10-12 minutes depending on your oven. I usually check them after eight minutes so I can see how they are doing. When done, the edges should be golden brown.
