This is the first recipe my husband asked me to get from my mother-in-law after we got married. As soon as I made them, I saw why! They’re absolutely delicious! I could eat them for breakfast, lunch and dinner…
Cream together the butter, shortening, sugar and brown sugar. Add the eggs and blend.
In a SEPARATE bowl, combine the flour, baking soda, baking powder and salt. Mix well.
Beat the dry mixture into the butter mixture.
Add the vanilla and blend.
Stir in the oats and butterscotch chips. (You can also use peanut butter or chocolate chips or a combination!)
NOTE: Depending on how much time I have, I like to chill the dough for 30 minutes to an hour, but it’s not a must.
Spoon the dough onto a baking sheet. (I make them about the size of a ping-pong ball.)
Bake at 375 degrees for 9-10 minutes. Don’t let them set completely if you want them chewier.

Alrighty, I don’t usually jump to bake with butter and I didn’t have shortening in the house. After several past cookie batches made with “good for you” ingredients that were blagghhh, I decided to go for it.
Bought Guittard butterscotch chips…nice mellow butterscotch flavor. I bought shortening made from palm and sunflower oil and went for it…big time.
LOVE these damn cookies. I put half the dough into the freezer for next month.

Very good. Crispy on the outside…chewy inside!! I didn’t have butterscotch chips on hand so I used chocolate chips instead. Delicious!!! I will be sure to try butterscotch next time. Thanks for the recipe!
