These can be made using almond extract instead of the anise extract for those who don’t like the licorice flavor of anise. Nonni Anne, my husband’s grandmother, always made these using walnuts from their own orchard.
Cream butter and sugar. Add eggs one at a time; beat well after each one. Add vanilla and anise or almond flavoring.
Sift flour and baking powder and add to above mixture. Mix in nuts with wooden spoon.
Separate dough into two parts on floured parchment paper or surface. Flatten into bars the length of the cookie sheet.
Bake at 350 degrees (F) for 1/2 hour. Remove and cut the bars on a diagonal. Lay out the slices on a cookie sheet with one cut side down. Place back into the oven for 15 minutes to toast.
