A family favorite—regardless of how much I make, there are never any left over the next day.
Using a heavy sauce pan, bring brown sugar, margarine and milk to a boil. Let it boil for 2 minutes, stirring constantly. Remove from heat.
Add vanilla and peanut butter and mix until smooth and peanut butter is melted. Add the chocolate chips and oats and mix evenly.
Drop by the spoonful onto a parchment or wax paper-lined baking sheet.(You can put the sheet in the freezer to speed up the cooling process).
* Variation: you can add 1/2 cup of chocolate chips in when you add the peanut butter.
