They called them Preacher Cookies, because these cookies could be prepared quickly. When a housewife looked out the window and saw the preacher riding up the mountain on his horse, the cookies would be cooled and almost done by the time he arrived. These are the cookies I grew up on. Now my kids love them as much as I do.
In a medium-sized sauce pan over medium high heat, add butter, sugar, cocoa powder, evaporated milk and salt. Stir until butter is melted and ingredients are incorporated. Bring to a boil, and boil for 2 minutes (important step) stirring constantly. Remove from heat and stir in peanut butter until completely melted. Add vanilla and oatmeal, mix well. Now working quickly before it cools too much, drop by tablespoonfuls onto waxed paper. Let cool completely on waxed paper. Remove the cookies when they have set up.
If you do not boil these for the full 2 minutes, the cookies will not set up.

I am making some today. They are a favorite in our house, the kids love to see these on the counter when they come home from school. Pefect for summer since it’s already close to 100 degrees here in Texas.

I used almond butter and regular whole milk because that’s what I have. I also added an additional tsp of cocoa and some dark chocolate almond spread (like nutella). I have a problem following recipes to the letter.
