No Bake Chocolate Chip Cookie Dough Balls

Description

If you eat cookie dough more than you eat cookies, this saves you the trouble of that risky raw egg business and adds nutrients!

Ingredients

  • ⅔ cups Cashews
  • 1-½ cup Regular Oats
  • 1 teaspoon Kosher Salt
  • 5 whole Medjool Dates
  • 1 teaspoon Vanilla Extract
  • 4 Tablespoons Agave
  • 4 Tablespoons Dark Chocolate, Chopped

Preparation

1. Line a baking sheet with parchment paper or a nonstick mat.
2. In a food processor, process the cashews and oats until you have a fine crumble (the finer the better).
3. Add kosher salt and roughly chopped pitted medjool dates. Process until fine.
4. Add in the vanilla and agave and process until the mixture comes together in a ball. (I also had to move my ingredients to my stand mixer to incorporate.)
5. Transfer to a large bowl and stir in the chopped dark chocolate.
6. Roll into balls.
7. Freeze for 1 hour to set. Serve immediately.
8. Store in an airtight container in the fridge. Unless you eat them all in one sitting. I would.

Amazingly GOOD! a little on the dry side, so I added a little olive oil (next time I’ll use coconut oil) I also added 1/2 c. finely shredded raw butternut squash.
