Description

My Nannie cooked dinner every Sunday for many years of my life. She often served her delicious and simple lemon cake. I often cook her lemon version but, recently tried it with orange! I think strawberry and lime versions will be next! Simple, delightful and versatile. Just like Nannie.

Ingredients

  • 1 box Orange Supreme (or Lemon) Cake Mix (16.5 Oz Box)
  • 1 teaspoon Orange Extract (or Lemon Extract)
  • 4  Eggs (large)
  • 1 package Orange (or Lemon) Flavored Gelatin (0.3 Ounce Package)
  • ¾ cups Vegetable Oil
  • ¾ cups Buttermilk
  • 1 cup Confectioners Sugar
  • 1  Orange, Zest And Juice (or Lemon, Zest And Juice)

Preparation

Preheat oven to 350 F. Mix cake mix, extract, eggs, gelatin, oil and buttermilk in a large bowl. Pour into a non-stick sprayed, deep 8×8-inch pan.

Bake for 45 minutes or until a knife inserted in the middle comes out clean. Right before the cake is done, mix the confectioners’ sugar and the zest and juice of an orange together in a medium bowl to make the frosting.

When the cake has finished baking, remove it from the oven. While it is still hot, poke a bunch of holes in the cake with a fork tine. Pour the frosting over the top of the cake and let it seep through. Cut into 9 big squares and enjoy!

No, AngAk…I get that question a lot. The 8×8 inch pan is perfect for me and this recipe. It fills the 8×8 perfectly. I like the bigger pieces. My Nannie had more mouths to feed and she would use the 9×13 (with less bake time). This cake is always so moist, simple, and delicious.Thanks for the comment!!

That seems like a lot of batter for an 8X8 inch pan. doesn’t it overflow?
