Oatmeal cookies are my absolute favorite. This recipe makes a lot of cookies so you may want to share with your friends. Raspberry jam is my favorite, but I have also used blueberry, blackberry and apricot jam. Get yourself a cold glass of milk and enjoy these cookies.
In an extra large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the oats, flour, dry pudding mix and baking soda in another bowl and then gradually add to the creamed mixture. Mix well.
Roll dough into balls and place on lightly greased baking sheets. Using the end of a wooden spoon handle, make a small hole in each cookie. Fill the hole with jam.
Bake in 375 degrees (F) oven for 12-14 minutes or until golden brown. Remove to wire racks to cool.
Makes 6 dozen cookies.
