Description

Not your ordinary spice cake—no eggs or milk!

Ingredients

  • 2 cups Sugar
  • 2 cups Dried Cranberries
  • ⅛ teaspoons Salt
  • 2 sticks Unsalted Butter
  • 1 whole Large Thin-skinned Orange
  • 2 teaspoons Cinnamon
  • 2 teaspoons Ground Cloves
  • 2 teaspoons Nutmeg, Freshly Grated
  • 2 cups Water
  • 4 cups Flour
  • 2 teaspoons Baking Soda
  • 3 cups Pecans, Toasted And Chopped
  • ¼ cups Powdered Sugar, If Desired

Preparation

Preheat oven to 325F degrees. Grease and flour a large tube pan or bundt pan.

Cut orange in half and remove any pits. Using a food processor, grind orange (no large chunks).

Bring to a boil the following ingredients: sugar, cranberries, salt, butter, orange, cinnamon, cloves, nutmeg, and water. Remove from heat and allow to cool.

Add flour and baking soda to cooled mixture. Stir in nuts.

Pour into prepared pan. Bake for approximately 1 hour or longer, possibly 2 hours. Begin testing for doneness wtih a toothpick after one hour.

Let cake cool for 15 minutes in pan. Invert onto a cake plate. Dust with powdered sugar, if desired.

Is the cooking time correct ? In the ingredient portion it says 3 hrs..but in the actual directions , it says 1 – 2 hrs.
