Oatmeal and peanut butter collide with chocolate in this classic cookie.
Preheat oven to 350 F. Combine eggs and sugars in a medium-sized bowl. Mix well on low speed. Add vanilla, butter and peanut butter. Mix again until smooth.
In a large bowl, combine oats, baking soda, chocolate chips and M&Ms. Mix together and then add the wet ingredients and continue stirring until well combined.
Place tablespoon-sized portions of the dough onto a greased cookie sheet about 2″ apart. Bake for 15 minutes at 350 F or until golden brown. Then remove them from the oven and allow cookies to cool on the sheet for 2-3 minutes. Then move cookies to a rack and allow to cool completely.
Makes 50 cookies.
