Description

The taste of fresh lime and mint are a sure summer favorite. Combine those yummy flavors with a salty pretzel crust and you will feel like you are drinking a Mojito.

Ingredients

  • FOR THE CRUST:
  • 1-½ cup Pretzels, Finely Crushed
  • ⅓ cups Butter, Melted
  • FOR THE FILLING:
  • 8 ounces, weight Cream Cheese, Softened
  • 2 whole Limes, Juiced
  • 1 whole Lime Zest
  • 2 Tablespoons Fresh Mint Leaves, Minced
  • ⅔ cups Sugar
  • ¾ cups Greek Yogurt
  • 1 drop Yellow Food Coloring Gel
  • 1 drop Green Food Coloring
  • 1-½ cup Whipped Topping
  • FOR GARNISHING:
  • 1 cup Whipped Topping
  • 10 sprigs Mint Leaves
  • 10 slices Lime

Preparation

For the crust:
Line the inside of a 9″ springform pan with plastic wrap.

Mix pretzels crumbs and butter together. Press pretzel crumbs into springform pan. Freeze crust until filling is ready.

For the filling:
Beat cream cheese until fluffy. Add lime juice and zest, mint, sugar, yogurt. Mix together until smooth. Add food coloring if desired. Fold in whipped topping. Pour onto crust and smooth. Freeze for 3 hours or overnight.

For the garnish:
Let pie sit at room temperature for 10 minutes. Cut into 10 pieces. Garnish with additional whipped topping, mint leaves and lime slices. Serve.
