Awww. What can I say? Pumpkin Cookies + Cream Cheese Frosting = Fall Bliss.
These cookies are scrumptious!
Mix sugar, butter and egg. Add pumpkin; mix well.
Sift dry ingredients. Add dry ingredients to the pumpkin mixture and beat well.
Using a small rounded cookie scoop, drop cookie dough onto baking sheets. Bake at 350 degrees for about 9 to 10 minutes.
Frosting:
In the bowl of a tabletop mixer fitted with a flat beater, cream together the cream cheese and butter, scraping down the sides of the bowl and beater twice, until fluffy.
Add the powdered sugar, first mixing on low speed,
then increasing the speed to high. Beat until light and fluffy, again scraping down the sides of the bowl and beater twice.
Blend in the vanilla. The icing should be smooth and spreadable. If it is too thick, add a wee bit of milk.
Spread on top of cooled pumpkin cookies. Enjoy!

Can’t wait to make these on Thanksgiving for the people who aren’t pie fans… and even for the people who are! Thanks for a fun alternative to pumpkin pie.

Ok..a few people have tried these delicious cookies and loved them. I think next time I make them, I will add some chopped nuts! Again…thanks ….these were really yummy

OMG These woke everyone in my house! The smell..ooooooooh baby! These are really moist and taste soooooooooooo yummy. I only worry about how to transport them because they are so moist that you really cant stack them. I suppose you could but they wouldnt look as pretty. I just made them so maybe after the cream cheese frosting (that was soooooooooooo good) hardens a bit it may be ok.
