Description

A delicious no-bake cookie with flavors of coffee and chocolate. We make these every Christmas and they are one of the most coveted cookies on the platter!

Ingredients

  • ¾ cups Butter
  • 4-⅛ cups Confectioners Sugar
  • 1-½ Tablespoon Instant Coffee Powder
  • ⅜ cups Boiling Water
  • ⅜ teaspoons Salt
  • 3 cups Old Fashioned Or Quick Cooking Oats
  • 9 ounces, weight Semi-sweet Mini Chocolate Chips
  • 1-½ cup Finely Chopped Pecans

Preparation

1. Beat together butter and sugar until light and fluffy.

2. Dissolve coffee powder in water. Blend coffee and salt into butter mixture.

3. Stir in oats, chocolate pieces and 1/2 cup chopped pecans.

4. Chill about 30 minutes; shape to form 1-inch balls. Roll in remaining pecans.

5. Chill several hours or overnight. Store in refrigerator.
(Makes about 6 dozen balls)
