Delicious, light, and crispy.
Preheat oven to 375 degrees. Grease and lightly flour 2 large cookie sheets (you can use Baker’s Ease).
Beat egg whites with cream of tarter and salt until foamy. Gradually add sugar, 2 teaspoons at a time, and beat until soft peaks form. Add in extract and coloring and blend. Gently fold in chips.
Drop by teaspoonfuls, 1 inch apart, onto pans. Place in preheated oven and turn off oven. Let stand in the oven, with the door closed, for 8-12 hours.
Makes about 5 dozen.
